About this deal

Once your buttercream is made, but before you colour it, use your spatula to mix and press your buttercream around your mixing bowl for about a minute or so. This smooths out your buttercream, pushing out air bubbles, so giving you a really silky buttercream to work with for your final step. This step is optional, of course, but worth doing to avoid the air bubbles! Of course, for me my baking has to also be about visual appeal. So when considering the buttercream for these beauties (I already knew the cupcakes had to be chocolatey!), I wanted to hold onto the sweet springtime colours of mini eggs. Hence, the obvious decision was to use the same colours for my buttercream. I love this technique too: it looks so impressive and fun, but it’s actually really quite easy to do, I promise! Mini eggs are perfect on mini cupcakes because they appear larger on top of them. These are also the perfect size for kids as a treat.

Obviously, they're mainly an Easter chocolate, but you tend to be able to find them from soon after Christmas, right through the summer at least! Are Cadbury Creme Egg cakes suitable for vegetarians? Buttercream: Once again, any flavor buttercream would work. I’m using my vanilla easy Swiss Meringue Buttercream (recipe below), but if you prefer Italian Meringue or American Buttercream– go for it! I wouldn’t recommend a softer buttercream (such as Ermine Buttercream or French Buttercream) as these won’t be stable enough to support the cake layers.

This cake also goes the extra mile because it has crushed mini eggs between the layers. And I mean come on, crushed mini eggs in a cake? YES PLEASE. I tend to get a layer of my sponge, spread on some of the buttercream, and add on some of the crushed mini eggs and repeat until the top of the cake. As much as I love making desserts from scratch, sometimes I prefer a little bit of a simpler method. For this cake, I chose to use storebought white cake mix, but I did add some extra tweaks to make it taste just as good as homemade cake! I bake the cake at 150ºfan in my oven as its a deeper cake, and it makes it bake flat. It also tends to stay moister. If you’re in a rush you can bake it at the usual temperatures, but adjust the baking time accordingly. Crush the mini eggs for the cake batter really finely to prevent them from sinking to the bottom of the cake. Every year I count down the days until I can get my caramel egg fix. I get so excited when I start to see the Easter aisles going up in my local store. This year I couldn’t help but turn my favorite eggs into this decadent Cadbury Cake. Add the eggs one at a time, beating well at medium-high speed between additions. Scrape the sides and bottom of the mixing bowl, and mix for 30 seconds more. The batter will be thin. Whip together your frosting ingredients and let your cake layers cool completely before frosting and decorating.

You'll of course need the usual weighing scales, spoons and a mixing bowl, plus a 12 hole muffin tray and cases to bake your cupcakes in. I like to use an electric hand whisk or stand mixer to help speed up making the batter and buttercream frosting, but a good old-fashioned wooden spoon and hand whisk will work just fine too. Five: To make the buttercream frosting mix together the icing sugar, softened butter, vanilla extract, and milk with an electric whisk until smooth and creamy. Use the paddle attachment for the cake batter and the balloon whisk attachment for the frosting. Follow the instructions on the recipe, making sure to scrape the sides and bottom of the bowl with a spatula as you go to get everything well mixed. We top this Mini Eggs Easter cake with chocolate frosting and Cadburys Mini Eggs. I use ready made Cadbury Chocolate Icing but you can always make your own chocolate buttercream frosting or ganache if you want to. I always use gel colours in my baking, as I find the colours are stronger and less likely to affect the consistency of my buttercream. If however you don’t want to use coffee in your cupcakes, just replace this with 1 tbsp milk instead. I’m rolling out the big guns today with this chocolate mini Cadbury egg cake! This recipe calls for medium eggs, so if you use large eggs instead, that might present an issue, making the batter too wet and the cakes too eggy. Why didn’t my cakes rise? Why did they sink in the middle? Grab three microwave safe bowls. Put the milk chocolate in one and divide the white chocolate between the other two. Melt in the microwave (in 30 second bursts) or over a bain-marie.
