Michel Fauconnet 2004 - 2023 | Joined Laurent-Perrier in 1973, became the 3rd Cellar Master of the House, after respectively Edouard Leclerc in 1950 and Alain Terrier in 1983. Based in the heart of the Champagne region in Tours-sur-Marne, Laurent-Perrier has a pedigree for innovation, handcrafting elegant Champagnes using traditional, time-honoured methods. This is beautifully balanced with fine streams of flowing bubbles – the hallmark of the finest Champagne – leading to delicate citrus and subtle floral notes on the nose. Distinguished by the chubby round hipped bottle, this rosé Champagne has become highly successful, created unusually from 100% Pinot Noir from the best vineyards, and using, for a few days only, the saignée method (contact with the red grape skins) rather than the addition of red wine.

The aromatic depth of the rosé pairs with marinated raw fish, grilled prawns, exotic dishes, Parma ham and red fruit desserts. The timing of maceration is crucial and legend has it that the first Chef de Cave, Edouard Leclerc, slept by the tank to stop it just in time! This technique gives it the highly expressive bouquet and fresh berry flavours that have made it a benchmark for rosé Champagnes. The iconic Cuvée Rosé is made using the highest quality Pinot Noir grapes and is one of the few rosé Champagnes produced by drawing the juice from black grapes instead of blending red and white wines.For blending, only the musts of the cuvée are used, so only 80% of the grape juice extracted from pressing. The result is outstanding, lovely darker red fruits dominate this easy to drink rosé and it is no wonder it has so many fans. I love how, with time, it starts to show a wilder side of itself, with lovely dark, spicy tones and sous-bois undernotes.
