About this deal

DEAR MAYO CLINIC: A friend has a family history of diabetes and obesity. She is diligent about eating healthfully and enjoys sharing new recipes and information about food. Recently she mentioned a sugar substitute called erythritol. I'm not familiar with this product. Can you explain what it is and if it is healthy? With all the horror surrounding sugar use and how it is linked to health ailments such as diabetes and heart disease, the market for sugar substitutes has seen a boom over the past few decades.

Eating and drinking too much sugar can negatively affect one's health. Sugar found naturally in food, such as whole fruits, is not associated with increased health issues. But added sugar has been shown to contribute to dental cavities and is associated with multiple chronic diseases such as heart disease, obesity, fatty liver disease and Type 2 diabetes. Sweetener blends – These are usually designed to measure 1:1 with sugar, which is very convenient. Most brands of monk fruit and stevia are actually erythritol blends, so they will behave the same way, but they are sweeter. If you are replacing erythritol in a recipe with a 1:1 blend, use 3/4 cup of the blend for every 1 cup of erythritol. (Or use 1 1/3 cups erythritol to replace each cup of the blend if converting in the other direction.) The sweetener conversion chart and calculator above make this easy to do. Monk fruit allulose blend will have the same conversion, but will yield better, more allulose-like results (see the Allulose vs. Monk Fruit vs. Erythritol section above). Erythritol is found naturally in some foods. It's also made when things like wine, beer, and cheese ferment. Besides its natural form, erythritol has also been a man-made sweetener since 1990. The main issue with stevia is that it can have a bitter aftertaste, which is worse when using larger quantities. Blending it with other sweeteners, like erythritol, can help. The bitterness can also vary among brands, or even among batches from the same brand, because the age of the stevia plant leaves plays a role. Younger leaves have less bitterness, so how and when they are harvested will impact the aftertaste that results. Is Stevia Keto? If you can’t get your hands on one of the top powdered erythritol brands listed above, you may opt for one of their substitute products such as allulose, xylitol, or monk fruit and stevia sweeteners.

One of the most significant measuring tools for sugar alternatives is glycemic index( GI), which measures how much they increase blood sugar levels. The lower, the better, but there are other factors outlined below. Sugar Alcohol Sugar Substitutes: Erythritol & Xylitol Although powdered erythritol is widely promoted as a plant-based natural sweetener, it is, in reality, an artificial sweetener. grams of erythritol – add 0.05 gram of stevia – or 1/32 teaspoon, most likely the size of your stevia scoop. To make our keto baking sweetener as sweet as sugar, we then need to use stevia in a proportion 10 times smaller than the one used in the study. So, for keto baking sweetener that tastes exactly like sugar, we’ll add stevia to erythritol at a 1% of the amount: i.e., 1 gram of stevia to 99 grams of erythritol. I do 100, because I like round numbers and can’t really tell the taste difference 🤷‍♀️ How to measure erythritol and stevia for DIY sweetener blend

The authors of a 2016 research review also concluded that erythritol is more effective against dental plaque and cavities than xylitol or sorbitol ( 8). Summary It's popular because it's low in calories, and it tastes and feels almost like table sugar. It's added to some sugar substitutes that are sold as "natural" alternatives to sugar. Sugar-free products that have erythritol might be recommended if you have obesity, diabetes, or metabolic syndrome. Erythritol Products Besides its naturally occurring form, it is also available as an artificial sweetener that you can easily find in the supermarket along with other similar products. Date Sugar – Date sugar is one of the least processed sweeteners. It’s the ground-up equivalent of whole, dried dates, so it retains a lot of the vitamins, fiber, and other nutrients of the dried fruit. It has a glycemic index of 42, which is lower than many nutritive healthy sweeteners, but still fairly high. On the negative side, date sugar does not melt or dissolve, and has a strong date taste that doesn’t work well in all recipes.
